The founder of Cervantes New Mexican Restaurant and more recently, Cervantes Food Products, is a descendent of Spanish immigrants who first settled in this area more than 200 years ago. As a youngster, Roberta began pursuit of her dream of developing a ‘very special and unique kind’ of New Mexican cuisine which would combine the best features of all the influences found here -Native American, Mexican, and Northern European - as well as the Old World Spanish traditions her family had cherished for generations.
